This one is so summery!
Fresh, zesty, and oh so creamy. Ideal for breakfast with some fresh chopped fruit, or on its own if you're in a hurry, as well as a mid morning or afternoon nutrient hit.
Rich in chlorophyll, protein, fibre, essential fats, and sustained energy, this one will be a hit for sure. Nobody would ever guess that quinoa is one of the main ingredients!
Ingredients for up to 4 servings
1/2 cup cooked quinoa, and left to cool, or better still, kept in the fridge overnight - this will speed up your setting time
1 can coconut cream, we use a brand in NZ called Ceres Organics as it is free of fillers and thickeners. Different brands may have a varied setting result
3 Tablespoons maple syrup, or rice malt syrup
2 Tablespoons lime juice
2 scoops of your favourite vanilla plant protein powder
3 teaspoons SUPER NATURE organic wheatgrass powder
1 teaspoon psyllium husk
Method
Place all the ingredients into a blender and blend on high until silky smooth.
Transfer to a sealable container and into the fridge for at least 2 hours, or overnight. Enjoy!
When serving, a little drizzle of maple will add to the decadence, totally optional.
